Need a kick-ass "finger food" to impress co-workers at party!

I’m almost embarrassed, because I make a very decent pot of chili, but this dip has nothing to do with GOOD chili. It is merely a party/tailgating/snack food with no delusions of grandeur, but trust me, everyone goes crazy for it.

You simply need:
[ul]1 pound of Velveeta, cut into 1-inch cubes. (Normally I am anti-Velveeta, but real cheese will not melt properly. Some of it will harden and turn into a crust, and it will get way too oily. This one time, Velveeta is your friend.)[/ul]
[ul]1 can Hormel chili, the no-beans variety. (I know, this should be sacreligious for chili lovers, but you need the consistency–all the same, no big chunks).[/ul]

In a large, microwave-safe bowl (I tend to use plastic Rubbermaid containers, put in a layer of the Velveeta cubes, the entire can of chili, and cover with the rest of the Velveeta. Microwave for 5 minutes, stir thoroughly to blend it together, and just keep microwaving until the cheese is fully melted and it is all orangey-brown and smooth. This goes perfect with tortilla chips, Ritz crackers, on top of nachos… I’ve put out really good spreads for people in the past, and this chili con queso dip is by far the most popular “party food” I’ve ever made.

I second the Hormel-Velveeta dip. I’m planning to serve it at my apartment-warming party next weekend, though it’s not exactly new carpet-friendly.

I was going to start a thread like this to get suggestions for new party foods, but this one’s great. Anybody else have a recipe to contribute?

My variation on the chili dip is a queso dip, sort of.

One large thing of Velveeta, cut as BigBadVoodooDaddy suggests.

Instead of chili, at least one can of Ro-Tel diced chilis & tomatoes. This comes in several hottness varieties - I tend toward the traditional/medium variant.

Otherwise, follow all the same directions as the chili con queso dip.

No problem, it’s an honor to be confused with such a sharp-dressed, snazzy band. And the Ro-Tel tomatoes are a great idea!
