The sundaes will be available over the course of 3-4 hours and we’ll be making them outdoors. So, it will be a “flow” type situation, but you never known how many will be standing in line at any one time.

Note to JayJay: 
Some Archway Lemon Frosted Cookies might be just the ticket. They have scalloped edges and resemble the sun, are premade, delicious, and relatively inexpensive. Use the cookie as a base for the ice cream, top with warm pineapple ice cream topping, and sprinkle with shredded coconut dyed yellow with food coloring. Quick and sunny.

Embed a few chocolate chips randomly in each scoop to represent sunspots. (Note: for scientific accuracy, the spots should mostly center around the sun’s equator.)
Heh. I was thinking about adding chocolate chip sunspots to my concoction of orange sherbet and tinted pineapple ring, but I didn’t think it would go. Though I suppose if the chocolate chips were dark, semi-sweet ones, they might work. Yum, orange and chocolate.
Stick a daisy in it and call it a corona. 
Problem is, all electronics in the area will go wonky. The PA and radios will get hella static.

Well, I did it! Tonight, after sorting through all of your suggestions and a bit of experimenting I came up with what I think looks pretty good. (My husband and our cocker spaniel were the official taste testers and it gets two thumbs and four paws up!)
It consists of vanilla ice cream, pineapple topping, whipped cream clouds sprinkled with a bit of coconut dyed with yellow food coloring, an Archway lemon cookie with M&M “eyes,” (a supply of which can be pre-made) and a cherry nose.
I took photos but don’t know how to post one here. Can somebody help me???
It’s pretty darned cute and was lots of fun to make and take photos of. Admittedly, the organization will probably make some changes and I know they’ll be using paper/styrofoam bowls, but still…
