Check out Baker Street (Gerry Rafferty) by the Foo Fighters. It’s awesome.

Also their cover of I Feel Free (Cream) is pretty damn good.

I’ll add in Hotel California by the Gipsy Kings (as featured in the soundtrack to The Big Lebowski).

*The Bad Plus doing Blondie’s “Heart of Glass” as an instrumental jazz song
*Jimi Hendrix did a great version of “Day Tripper” on Radio One (I’ve also got him playing a version of “Sgt Pepper’s Lonely Hearts Club Band” during a live show the day that the Beatles released the album)
*Red Hot Chili Peppers did Hendrix’s “Fire” on Mother’s Milk (plus “Castles Made of Sand” on a compilation)
*Continuing the Hendrix theme, Don Byron did a badass, funky jazzy version of “If Six Was Nine” on Nu Blaxploitation
*The Minutemen did great covers of all kinds of older rock acts, but my favorites are CCR’s “Green River” and Steely Dan’s “Dr. Wu”
*Another early 80’s LA punk classic: Black Flag doing “Louie, Louie”
*Dinosaur Jr has a great version of the Cure’s “Just Like Heaven”

Some great cover-based albums and compilations:
*Seu Jorge has a terrific album of acoustic, Portuguese-language David Bowie covers on the Life Aquatic soundtrack
*Primus did an EP covers called Miscellaneous Debris. All the songs are great, but the highlights for me are Pink Floyd’s “Have a Cigar” and XTC’s “Making Plans for Nigel”
*The soundtrack for the Bob Dylan pseudo-biographical movie I’m Not There is quite good all-around

And couldn’t leave out Richard Thompson doing Britney Spears’ “Oops I did it again”

It’s closer to “jokey” but I like Jonathan Coulton’s acoustic guitar-and-vocals covers of Queen’s “We Are the Champions” and Sir Mix-a-Lot’s “Baby Got Back” (both are on YouTube to check out).

You mentioned “Everybody Knows” but I’ve always preferred Concrete Blonde’s cover of George Harrison’s “Beware of Darkness”.

I second (or is it fourth by now) “Common People” by Shatner/Folds/Jackson.
