I’m trying to work up some sort of treat for DH that will help him get more cinnamon down (he’s Type 2 diabetic, we do not have medical coverage, and there are studies that show some effect). He really likes peanut butter as well, so we’re trying to figure out something that combines the two, can use Splenda for sweetening, and is generally low in carbs. I’ve been looking at no-bake cookies, he’s thinking something more fudgey.
For a PB treat I like to mix PB (Trader Joe’s!) with Splenda and flax meal, and then break up a couple squares of sugar free chocolate into it. Tastes generally like a peanut butter square.
I suppose you could add cinnamon to this? No idea how it’d taste.
My most favorite low carb cinnamon treat is cinnamon sugar pork rinds. Take a 3oz bag of pork rinds and lay them out on a cookie sheet lined with something like foil or parchment or wax paper. Melt 3-4TBS of butter in the microwave. Pour the butter over the pork rinds trying to coat evenly. Put the pork rinds in a gallon Ziploc bag, then sprinkle with a mixture of cinnamon and Splenda*, then shake until coated.
I can’t stand pork rinds but I could eat this snack all day long.
*I honestly can’t remember the amount of cinnamon and Splenda I use. Haven’t made these since January. I say make a mixture of at least 2TBS Splenda + 1 TBS cinnamon and go from there, mixing to the right taste for you.
If a “pinch” of cinnamon is useful to you, you can always start the day off with a mock danish.
You can get cinnamon in capsules. I use Puritan online for supplements, but I’ve seen it at Walgreens/Ocso/CVS. It’s not very expensive, and the only way to get a consistent theraputic dose every day. Take it with a meal. The capsules can also be pulled apart and used in cooking if you want to give them double duty.
Tablespoon of peanut butter
Tablespoon or two of heavy cream
Desired sweetener to taste
Desired dose of cinnamon
Stir vigorously until the mixture thickens into a frosting-like consistency, and eat right off the spoon. I’ve never done this with cinnamon but imagine it would work. It’s a great fat bomb for those hollow-leg days when you just seem to be hungry no matter what you eat.
Another quick high-fat, low-carb treat: take a low-carb tortilla, put a hunk of good butter on it, add cinnamon and Splenda (or sweetener of choice) and microwave for 15 seconds or so until the butter just starts to melt. Fold up and nom.
