Non-traditional pasta salad recipes needed.

I know you’re event has come and gone (and it sounds like it was great!), but I thought you’d like this recipe.

Orzo Salad with Spinach, Feta, and Olives

1 - 16 oz box orzo
1 Tbsp olive oil
2 cloves garlic, minced
1 - 10 oz pkg fresh spinach, washed and trimmed
1 - 6 oz pkg kalamate olives, quartered
8 oz feta cheese, crumbled
1 - 4 oz pkg sun dried tomatoes in oil, drained and cut into strips.

Fix the orzo according to package directions. Meanwhile, heat oil and garlic in a skillet. Add the spinach and cook until wilted (about 2 minutes). Remove to a colander. Drain and squeeze out the extra water.

Place drained spinach in serving bowl. Add olives, feta, and tomatoes.

Drain orzo and return to pot. Stir over heat until excess water is evaporated. Toss into the spinach/cheese mixture.

Serves 4.
