It’s possible that that particular baker/manufacturer uses a process that produces different-looking ends, but it’s not something that I’ve ever noticed being true about bread in general.

It just occurred to me that the sourdough boule has either zero or an infinite number of heels. Maybe it the definitive mathematical proof that zero=infinity?

Many breads like french breads or other free form, differing from the pan shapes, the ends are similar if not exact.

But purchased loaf breads (Wonder, Nature’s own, store brand) often have two different looking ends. To my eye.

Maybe it’s for shipping so the back end sits flat against the bread trays.

I don’t know. It’s noticably different.

Say you’re nearly at the end of your loaf and the heel is in there. You take it out. Open your new loaf. Compare and let me know.

Once that loaf is sliced, it will have heels. At least two, and it could be sliced in such a way as to have more.

Interesting. I have never noticed that. Like others, I just consider that two heels. Here’s a picture of two heels that I assume are from the same loaf of bread, and I don’t see any meaningful difference:

We’ll occasionally get a loaf with three heels - or two heels and a sliver-cut. The SC can be as small as two inches by two inches, although it’s usually a bit wider than it is tall. It’s very narrow. It can’t be used to make a sandwich.

We usually throw it out. If you leave it in the loaf wrapper, it folds over and gets smushed. I’ve never seen a loaf with four heels. There’s usually only one SC.

It’s not that. My son works at a bakery. They call it the “butt”. You’re welcome.
