LOL, one reason the recipe got my attention was the use of tahini. I have a jar of it that I don’t use often and was glad to find a recipe that used a good amount of it!
I found that I liked the cookie better after it cooled, despite the recipe’s suggestion to serve it hot. It’s still so rich!
Here it is. I tweaked it a little to add more chocolate chips as is my preference, but you are substituting with dried fruit, so you won’t care.
From the NY Times:
Chocolate Chip Tahini Skillet Cookie
Yield: 4 generous servings
Ingredients
6 tablespoons/85 grams unsalted butter
½ cup/134 grams tahini
¾ packed cup/165 grams light brown sugar
⅓ cup/67 grams granulated sugar
2 tablespoons vanilla extract
1 teaspoon flaky salt, plus more for topping
1 large egg
1 cup/135 grams all-purpose flour
½ teaspoon baking soda
½ cup/44 grams semisweet chocolate chips
Vanilla ice cream, for serving
Preparation
Heat the oven to 375 degrees.
In a 9-inch ovenproof (cast-iron or stainless steel) skillet over high heat, add the butter and stir until melted.
Remove the skillet from the heat and immediately transfer to a cool surface, like a trivet or heat-resistant countertop. Add the tahini, brown sugar, granulated sugar, vanilla extract and salt. Stir, using a silicone spatula, until combined. When the batter has cooled to lukewarm, add the egg and vigorously stir to incorporate it.
Add the flour, sprinkle the baking soda on top, then mix everything together until there are no dry flour spots. Stir in the chocolate chips, saving a few to sprinkle on top, and spread out the cookie dough until it reaches the sides of the skillet. Scatter the reserved chocolate chips on top and top with a sprinkle of flaky salt.
Bake for 17 to 20 minutes, until a golden cookie crust forms on top. Allow the cookie to rest for 5 minutes, then scoop among serving bowls and pair with a scoop of ice cream on the side.
flyboy, glad you were able to get all the file-sharing issues put right. How frustrating!
red, happy nesting.
Good luck with the rollout, doggio. You’ve left me with a very graphic idea of how it’s actually going to go… yikes!
metal mouse, I am continually in awe of your dedication to obtaining and keeping better health and a smaller size. You’re one in a million to have accomplished it as you have. Inspirational, too.
My bedtime doesn’t change. I’m usually in bed between 10-11 p.m. and up between 6:30-8:00 a.m. As previously noted in the last MMP, I am not an early riser if I can help it. I do have a bad tendency to wake up at the bing of 3:00 a.m. and after a bio break, can usually get back to sleep for a few more hours. I hate the nights when my tricks don’t work and there is no more sleep to be had. Six hours a night is a good night!
It’s an overcast rainy day here, perfect to get some paying work done. I am getting my COVID shot tomorrow and have set aside Suffering Time for the rest of the week till Friday. I hope I don’t need it.
