Wondering how many use torches in the kitchen. I used my soldering torch today for roasting chillies and tomatillos and wished I would have started using it years ago. Roasts fast and complete with great control over color, also can be used in any position. Seeing it on baking shows for years but never went out to the garage to bring it inside before.
I probably use mine once a month. I last used it a week ago to put some color on some jerk chicken I did in the oven (no grill).
And I think you hit on an important point; The little torches they sell specifically for food are crap, use a real one like a BernzOmatic.
Yup, the BenzOmatic is great. Mr. Athena got me one for Christmas a few years ago. Never thought of using it for chiles - I’ll keep that in mind!
Make sure to use propane. Not sure of any health issues with MAPP gas.
If nothing else MAPP gas will fill your kitchen with an unpleasant smell. I have always disliked the MAPP gas smell.
I was using map gas, slight odor that went away quickly. My tomatillios took less than 30 seconds to brown each one to perfection, about the same for the chilis.
