Rainbow chicken

Back in the late '80s, in NYC, there was a Chinese restaurant in the West Village that had a dish called “Rainbow Chicken.” It was chicken with fruit (mandarin oranges, pineapple, perhaps mango and a few others) in a creamy white sauce. Does anyone have a recipe for this?

I’ve seen recipes named “Rainbow Chicken” that have veggies. What I need is the dish with fruit.

I don’t have a recipe for this, but just wanted to note the oddity of “Rainbow Beef” which was the big steam table pans of roast beef at banquets that had a sort of rainbow-colored oil slick on them. At least that’s what we called the stuff when I was a kid in Chicago.
