raw olives (how long will they keep?)

Ordered a box of raw olives from an orchard with the intent of curing them myself.
Today it hit me that I won’t be able to do so for several days.
Can anyone tell me if I can store raw olives in the fridge for up to a week? If not, anyone have any ideas on some way to store them for 7 or 8 days?

If nothing else, I’ll have to salt cure them all (had planned on only salt curing some of them, doing the rest in brine and lye - to see which way I liked most).

Raw olives keep forever.
They will start to shrivel, but they never spoil.

The proof of this is the ancient, wizened olives hanging from my tree…

Have you ever tried eating those wizened olives? I’ve been reading up on the things and one fellow said that they were amazing if air cured on the tree (apparently they go all wrinkly but the bitterness goes away).
Only time I’ve ever heard of this though.

Yes.
They are still somewhat bitter, but edible (like some oil-cured olives I’ve had).
I think you would need to soak them in something to plump them up (oil? water?), because they get pretty dry and hard.
Maybe I’ll try that this year…
