Recipe request. Teach me to make pierogies

Okay, So I given my input in a lot of food making threads(not like anybody listened, but still) Now I need some help.

How do make fall-to-my-knees pierogies. I love the things, so freaking good. I have tried my own inventivness, and looked at the various web recipies, but it doesn’t work. I always end up with what is basically Potato and cheese ravioli, which although interesting and hunger killing, isn’t what I really desire. Start at the beginning with supplies, describe the dough making technique, and every step. Please give up gramma’s secret. I really really want to make pierogies like the ones I had in Chicago!
