I like it fried with fried Eggs and fried Potatoes
You could make a Chicken Rouladen with spicy Sausage Stuffing.
Pound out halved Chicken (or Turkey) breasts very thin. Caramelize a couple of onions and a clove of garlic in some olive oil, Add the finely cubed/diced Polish Sausage. Saute till sausage is well browned and the onions are sweet. Add a dash of Cayenne, a teaspoon of Paprika, a drop of Tabasco, and a trickle of vinegar.
Spread a generous portion of the stuffing on one end of each thinly pounded cutlet and roll up into a cigar. Use toothpicks to secure. Dust the Rouladen in some flour and salt and pepper. Saute the Rouladen in the same pan with some olive oil until well browned. Add a 1/2 cup of Chicken Broth or White Wine. Cover the Pan and let simmer for about 15 minutes.
Remove the Rouladen and let the wine or broth reduce, take it off the heat and add a knob of butter and swirl to emulsify and thicken, throw in some fresh flat leaf parsley and spoon over the Rouladen for service. (Remove the toothpicks, b.t.w.).
(You could roll a thin slice of Swiss Cheese in with the Sausage Stuffing if you want… )
