Intriguing. I’m thinking some pork brats panfried with caramelized onions and sauteed apples and a little bit of red wine or apple cider vinegar to cut through the apples’ sweetness. Add steamed broccoli and a thick hunk of buttered bread and I would eat that.
^^That’s what I was thinking. It would be really good with spaetzle or some other noodly thing. Or polenta, fried or mushy.
I could also see doing some sort of mince pie/quiche featuring small bits or slices of sausage with the apples (and onions!). Maybe even toad in the hole with thin apple slices on top? Hmmm…I may try that myself.
How about mini-meatloaves made with loose sausage, featuring diced apples in the mixture?
Caraway or fennel seed, sage, mustard powder, and/or dried red pepper for spice notes.
The problem with cooking apples is that they quickly turn to mush. Make the sausage dish on its own, and then make a side dish of homemade applesauce, which is simple and quick. Or fry up some spicy sausage, cut up some fresh apples, and toss them both with some sliced celery, walnuts and a bit of mayo; basically, a Waldorf salad with sausage.
Penzey’s had a recipe in their magazine recently that featured their Krakow Nights Polish seasoning. It had sausage, cabbage, apple, and served with spaetzle. It was very good. I tried to find it on their website but it doesn’t seem to be working at the moment.
My wife’s cornbread-sausage stuffing recipe includes apples. Excellent!
Can’t find my recipe at the moment, but I make something similar. I think it starts by frying up some bacon, then adding apples and sauerkraut and letting that all cook down together. Then I take a casserole dish and layer it with sliced potatoes, smoked sausage, and the kraut mixture and bake it a while.
It’s an awful lot of meat for me, but the family likes it.

How about stuffed apples? Gently brown your sausage just a little, not fully cooked. Core out your apples and stuff with sausage and roast for 30 minutes. Never tried this and in fact just thought it up but it sounds like there could be potential!
I’m sure our local market has pork&apple sausages. Unless it’s only seasonal.
Over here one of my favorites sausages is the Chicken and Apple ones from Aidells
Costco has them over here and I have seen them in Safeway and other supermarkets, a little bit expensive but worth it for a special occasion.
You’re going to want cooking apples to start with. They’ll hold their shape and texture after being cooked instead of turning to mush. Since they’ll likely be tart, rather than sweet, they’ll make a better compliment to the richness of the sausage.
Peel, core, and bake two whole apples. Arrange on a plate to either side of one end of a grilled sausage, and serve.

It’s not my recipe so I didn’t post it. I was thinking I might have gotten it from you. If I see an interesting recipe, I copy and paste it for later use. I sometimes get them from recipe sites like allrecipes but I have also copied recipes people have posted on this board.
My first thought is that apples and cabbage are often cooked together.
And sausage and cabbage is practically a staple in Germany.
So… all three could probably go together well without having to get think too hard about adjustments to the recipe.
As a second idea, my mother used to make some delicious stuffed and baked apples for desert, which were cored and filled a sort of bread-pudding-like mixture that included nuts and raisins. This could be turned savory by making the bread pudding more like a stuffing (like the Thanksgiving variety, just to be clear), and I already know that stuffing can go nicely with sausage.
You could also go the uncooked route, perhaps. My brother thinks that raw apple slices and cheese are tasty together. (I’m not sure I agree with him but I don’t like cheese on apple pie either). I suppose I could see adding a sliced sausage to the mix. He would probably like that. Your mileage may vary.
I like this idea. Quick and easy. Just grill up some brauts with a side of apple sauce.
