Oaxaca cheese doesn’t really crumble well, though, does it? It’s like a mozarella: stretched curd cheese.
This was going to be my answer.
Beans sound a little heavy. How about a fruit salad - pineapple, guava, things like that? No dressing, though, just some sweetness to offset the spices in the tacos.

If you need a side with tacos you’re doing it [del]wrong[/del] not correctly to my way of thinking.
Spanish rice, made from scratch with fresh peppers and smoked paprika.
This slaw variation was a hit with my wife. The kids are still a bit resistant to things like actual vegetables, and they don’t like sour things much, but they still tried it and didn’t hate it, which is like a singing-and-dancing enthusiastic endorsement from normal humans.
More of the same-- quesadillas!

These suggestions are great, and our household will refer back to this thread frequently. Elote was new to me, and I used the recipe from this website to make an elote salad. I didn’t follow it exactly, but pretty close. We loved it! In fact, the Mrs went back for seconds, thirds, and fourths.
Having never grilled my corn, I stood right by the heat for the first 10 minutes or so. I was surprised how long it took the corn to char, and that put me a little behind schedule. But after that first, exploratory ~10 minutes, I left the corn alone, and started working on the other culinary tasks.
But all evening I kept hearing a chorus of you guys in my head saying, “More tacos!” ![]()

Yeah, tacos don’t really need a side dish. I mean, I suppose if you want to go with the Mexican street food theme, you can put some esquites (which I see has already been alluded to in the thread, but no direct link given. Oh, wait, no I do see a link a few posts before this, calling it “elote salad.” Anyhow, there’s another recipe for you, but it’s all pretty similar.)
Around here, if you get a taco plate, it will often come with some red/orange rice and refried beans. At Mexican cookouts, I often will find grilled vegetables (like cebollita/knob onions, maybe some Mexican squash, and the such) served alongside as well.
Just wanted to say I made this* for dinner last night and it was a big hit!

- Well, pretty much. I served it over shredded lettuce with a scoop of taco meat, cheese, and sour cream on top. Even the picky kid liked it.
Cool! The great thing about it is that you can add/subtract as you please. ![]()
- Sides - Spanish rice, refried beans. BONUS: They can be used on the tacos!
- Appetizers - Nachos. salsa, queso. Bonus points for white cheese. BONUS: Salsa and queso can be used on the tacos!
- Desserts - Churros or Sopaipillas. Maybe a tres leches cake if you’re feelin’ all fancy.
Definitely refried beans.
