Not your usual heist movie but since you like gadgets you should definately check out Sneakers.
If you’re OK with Asian movies you should check out So Close. Sort of an HK Charlies Angels, but much much much much better. Two hot Criminal girls, one hot Cop teaming up to take out a really bad guy. It’s more of a martial arts flick than a hiest flick but it has alot of the elements on your wish list: Cool Hero(ine)s, high tech toys(The two Criminal girls have the worlds greatest surveillance system and can–somehow–hack into any security system on the planet), and complicated schemes.
Take the Money and Run with Woody Allen.
It really doesn’t include any of the plot devices that you’re looking for, but it is the only movie I can think of where a bank robbery is foiled due to really bad handwriting.
Teller: “Excuse me, but what does this say?”
Allen: This is a robbery…“It says, ‘Give me all of your money. I have a gun.’”
Teller: “No. I don’t think that’s it…This word looks more like ‘gub.’”
Allen: “Lady, this is a hold up…I’m robbing this bank. It says ‘gun.’”
Teller: "Are you sure? It certainly looks like ‘gub.’ I better have the manager take a look. Mr. Jones, could you come over here for a moment, please?
Manager: “Yes, is there a problem?”
Teller: “This man is trying to rob the bank, but I can’t make out his note.”
Manager: “Well, let’s just take a look shall we…“Give me all of your money. I have a gub.” Excuse me, sir…but what, exactly is a gub?”
Allen: “Gun. It say’s gun.”
Manager: "Oh, no, sir. It clearly says “gub.”
Keep riffing on this for about 5 minutes.
I second Sexy Beast. Its very British, but Ben Kingsley is just awesome in it. Check it out.
Three Kings is a heist-ish movie.

Always liked “The Brinks Job”. With Peter Falk and Peter Boyle.
I enjoyed the movie “How to Steal a Million,” but that may just be because I love Audrey Hepburn. Oh, and it’s too old.

A bit old, but Topkapi, from 1964. What a cast! Melina Mercouri, Peter Ustinov, Maximilian Schell, and Robert Morley.
From 1966, Gambit, with Michael Caine, Shirley MacLaine, and Herbert Lom. Very funny, to boot, because we first see Caine’s plan for the heist being acted out, then we see how things don’t quite go according to plan.
There’s 1972’s** the Hot Rock ** with Robert Redford.
1990’s **Quick Change ** with Bill Murray.
