The Day Of The Jackal (1973, Edward Fox). Not the crappy Bruce Willis remake (The Jackal).

Some obscure ones you might enjoy-
Hard Contract with James Coburn and Burgess Meredith from 1969 is fun and philosophical.
Assassination Bureau, also from '69 stars Oliver Reed and Diana Rigg. It’s a period movie based on a Jack London story.
Casino Royale (the new one)
My roommate at the time Netflixed it, and I liked it because it started out with an explosion in the guys house, and I was trying to figure out exactly how the other guy caused it.
It’s kind of a reverse hit man movie, in the sense that he’s protecting the first lady from a hitman.
Also reasonably “light and fluffy” is The Replacement Killers.

The Professional – with Jean Reno and a very young Natalie Portman
Road to Perdition – Tom Hanks as somewhat a a mix of hitman and enforcer.
Enemy at the Gates and the “Sniper” movies – if you want to call snipers assassins.
Man Bites Dog – film crew follows a serial killer, very unusual and interesting, maybe doesn’t really fit the traditional idea of assassin.
Three Days of the Condor – a hit on a CIA research unit. Max Von Sydow in a very good assassin role.
Pulp Fiction – pretty much everybody is a hit man – can’t believe it hasn’t been mentioned yet.
Ghost Dog – Forrest Whittaker as a self-styled samurai hitman.
The Shadowboxer – oddball story with a kind of incestuous mother/stepson hit team.
All the Godfather movies are loaded with hitmen.
In Apocalypse Now, Martin Sheen is basically an army hitman.
The Killers – a really good oldie with Lee Marvin.
The Replacement Killers – pretty good flick with Chow Yun Fat.
Point of No Return – kinda lame Briget Fonda flick.
but remade from a decent French flick called, IIRC, Little Nikita.

Want to second this one. It’s one of the originals. Bronson is the aging hitman, Jan Michael Vincent plays his apprentice.
Kill Bill (both) is even more about a team of hitmen.

“The Matador,” starring Pierce Brosnan and Greg Kinnear, if you’re open to hitman comedies.
If you want a faux-hitman movie, “Gotcha!” starring Linda Fiorentino and Anthony Edwards with a full head of hair (but still no chin).
