I recently gave a recorded statement to a claims adjuster regarding a small accident in which their insured was at fault.
It’s not an issue (yet), but, am I entitled to a copy or transcript of that statement? I haven’t asked for one, btw. I’d like to know the law.

No. Nothing like that.
I’m pretty sure that if you make a statement face-to-face, you get a transcript. I’m wondering if the same applies to a statement given over the phone.
In that case, I don’t know. I would suggest you call the state insurance commission in your state.
