Red Currant ideas

So, I saw a box of red currants last weekend, and the novelty was so strong that I bought it. I have grown red currants, and I like them fresh and raw. (And I’ve also made super jelly from them) but these ones were imported from Chile, and while they look good, the texture is a little gummy, probably because they aren’t really fresh.

They still taste fine, but I didn’t love eating them out of hand. There aren’'t enough to make jelly. What else can I do with them? Can I cook them with a little cream and call it a trifle or something?

Add them to salad with some goat cheese.

Infuse them in water. And drink it.

Or vodka. I’m not a vodka drinker, but I did this once and it was a big hit.
