Here is a dish I created from items on hand the other night. I named it after Hannibal Lecter for reasons you will understand from the ingedients.
1 pound chicken livers, drained and diced (unless Census Worker liver is available)
1 medium yellow onion, chopped
3 cloves garlic, minced
1 package frozen fava beans (Italian green beans)
1/4 cup extra-virgin olive oil
1/2 stick butter
1 pound rigatoni
In a medium saucepan, combine the oil and butter over medium heat. When the butter is melted, add the garlic and onion. Cook until brown. Add the liver, stir and brown the liver. Cover and lower the heat. Allow the liver to cook while you boil the rigatoni and cook the fava beans. If you are supremely lazy, you can actually do both in the same pot. When the water boils, add the frozen fava beans. When the water returns to boil, add the rigatoni. When the rigatoni are done, the beans will be done too. Drain the pasta and beans. Toss the pasta, beans and liver together. Have fresh ground pepper and freshly grated parmesan available at the table. Serve with a “big amarone” or a “nice chianti” whichever you prefer.
