Roasted green chilies vs diced green chilies?

I made the chili with just one can, but after we ate half of it I decided I should’ve used both because it wasn’t all that spicy. It was tasty but maybe a little bland. Threw some shredded cheese in with the last half of it, added sour cream, and called it dip. It’s very versatile, at least!

Yep, Anaheims are an offshoot of New Mexico green chiles. They were brought to Cali in the early 1900’s and bred to be milder v.s the NM line which are way hotter. So, while technically the same species, they are not the same chiles, if that makes sense.
