OK, so how should I prepare these rockfish fillets?
Coat with seasoned butter, then bake, broil, or grill. I’d recommend garlic, dill, and red pepper for seasonings.

That sounds pretty good. But does the dill work with the pepper and garlic? I normally use dill in a lemon-dill béchamel.

IMHO dill works well with most fish. But it’s your fish, you would know the seasoning combos you like. It’s really hard to go wrong here.

I’m thinking I like the butter, garlic, salt, and red pepper flakes. (I’ll have to be careful with the last, since the SO doesn’t like things as hot as I do.) With garlic and butter, mashed red potatoes with some garlic should work well with it. There are some green beans in the freezer, and I can heat those up too.
Or: Maybe baked with salsa, if the black beans in the fridge are still viable. I can mash the beans and make ‘refried’ beans.
