I like spinach, dried cranberries, feta, sliced almonds, and either a white wine or white or regular balsamic vinaigrette. Another favorite salad is what I named Harvest Chicken Salad: chunks of chicken (I either use a deli rotisserie chicken or grilled chicken breast), spinach, diced apples, toasted or candied walnuts, gorgonzola cheese, and apple cider vinaigrette. Also southwest chicken salad with mixed greens, chicken, corn, black beans, tomatoes, onion, avocado, and lime-cilantro-olive oil dressing. I am a lazy cook but like to eat healthy when possible, and rotisserie chickens + a bag of salad greens makes a good starting point for a quick dinner.
