Salads! With less mayo, please.

LOL- Brussel Sprout Wars. We love them and cook them many ways. I was trying to find something to do with them besides boil or steam. I think I made an OP about it once (or maybe just participated- can’t recall). Got lots of great ideas!

I have lots of teens to keep out of my snack pantry and want to offer them something besides pizza and hot dogs, and am looking to increase my fruit and veggie intake. It is so nice to go to the fridge and find 4-5 healthy salads available and ready to eat!

Dice tomatoes, cucumber and avocado. Add French Dressing to taste.

This weekend I made Cowboy Caviar, but I replace the Tex Mex seasonings with Asian seasonings. We called it Spaghetti Western.

Grilled veggie primavera.

Grill some fresh veggies and toss with warm pasta, olive oil and parmesan cheese. It’s great warm, room temp, or cold.

I like to grill (or bake) zucchini, yellow squash, tomatoes, mushrooms, bell peppers, garlic cloves, onions… anything you like!

I also like to add fresh grape tomatoes for a nice acid bite, too.

Wow- today’s salads are so full of awesome!

Couscous, caprese (in a bowl!) greek, and riata with fresh french bread toast (the leftovers to be croutons for another tomato salad soon- got a nice collection of heirlooms waiting…). Also made potato salad- the only mayo dish.

Got some “heavenly villagio marzano” tomatoes from Central Market- and they are divine! Also used fresh basil from my potted basil plant.

We recently discovered this recipe for potato salad with mint and peas, and we love love love it.
I have also substituted fresh oregano for the mint.

Clarification: Tabouleh salad, not couscous. Couscous is an ingredient.

You can use presto instead of Mayo.

Kirkland makes an acceptable pesto that is not overly expensive.

Boil / drain / rinse a box of penne noodles. Toss with good olive oil. Add some pine nuts, fresh spinach, and grated parmesean. I usually sprinkle some black pepper on it, too. Oh, nom.

My other pasta without mayo salad favorite: Thai Pasta Salad. This tastes much better the day after it’s made.

We did this tonight (thanks for the link)! It was excellent.

I added shredded chicken and used udon noodles instead of linguine. I also did an extra serrano pepper (3), and it still wasn’t spicy enough - but we like things hot. I went a little too light on the cilantro.

Definitely a keeper. I’m also interested in her ginger steak salad.

I’ve successfully substituted Greek yogurt or sour cream for mayo in most recipes.

I make a bean-apple salad that never has leftovers at parties. I don’t have an exact recipe, but ingredients are generally:

2 cans garbanzo beans
2 cans red kidney beans
1 small sweet onion
1 red and 1 yellow bell pepper
3 granny smith or other tart apples
white balsamic vinegar (I’ve also used pear and raspberry infused white balsamic)
olive oil
salt and pepper

Colorful, filling, and delicious!

If you’re in a hotel in Torquay (Britain) for god’s sake don’t order a Waldorf Salad! :smiley:
