SD Cooks: Recipe Sauce Reduction times

Just finished making Gordon Ramsey’s version of Cottage Pie. Took forever to reduce properly. The recipe ‘says’ 15 minutes, more like 40 minutes on high heat.

I dont think I have ever had a reduction time that matched the recipe. Granted I am on a crappy electric stove, but you’d think an electric range would be pretty good with reduction.

Is it because the recipe makers are making the dishes on professional grade 18K BTU gas ranges? Does anyone else have this problem? Or am I doing something inherently wrong?
