One of the Farrelly brothers (Robert) graduated from my alma mater, Rensselaer Polytechnic Institute. I’m unsure of whast his degree was in, though. But it was some kind of science or technical degree. For some reason electrical engineering seems right, but it might be something else.
Most of the ones I know have already been mentioned, but I do know a less famous example of what the OP is looking for.
Alexandra Tydings is best known for playing a Valley Girl version of the goddess Aphrodite on Hercules: The Legendary Journeys and Xena: Warrior Princess. She also appeared in two episodes of The Red Shoe Diaries. But aside from a pretty impressive dance background, she was a National Merit Scholar, studied at the Sorbonne, and has a degree in film studies from Brown.
James Woods dropped out of MIT when he realized his true calling was in front of the camera.
Erland van Lidth de Jeude, aka Dynamo in “The Running Man” and Grossberger in “Stir Crazy” (the huge shaven-head guy with the mean face) was an MIT graduate and computer entrepreneur, an accomplished opera singer, and an alternate Olympic wrestler.
Tom Scholz, who is the rock group Boston, has a BSME and MSME from MIT as well.
Nancy Pimental, who replaced Jimmy Kimmel on “Win Ben Stein’s Money” after writing and voice-acting for “South Park”, has a chemical engineering degree from Worcester Polytechnic Institute.
Jodie Foster graduated from Yale with honors in comparative literature, not Afro-American studies.
Outrageous showman Arthur Brown who among other things:
1)founded the “Crazy World of Arthur Brown”.
2) lit his head on fire while wearing a “fire helmet” as part of his stage act.
3) Had a smash 1968 hit “Fire” in which he screamed the not-so-subtle introduction - “I am the God of Hell-Fire”
4) Has a BS in philosophy from Britain’s Reading University.
He has left his native Britain and now resides in Texas as a counselor. (He has earned a Master’s Degree in Counseling).

Robert Beck/Iceberg Slim (the 30s-50s pimp and street criminal who wrote books on the subject) claimed he was given a test when he was young, scored 162 and was given a full scholarship to Tuskegee Institute where he has a 3.9 but I dont know how true any of that is.

Schwarzenegger, who is Catholic, has prior connections to Superior. In 1979 he earned a bachelor of arts degree through the University of Wisconsin-Superior’s Extended Degree program, and made several visits to the campus to complete the degree requirements. According to the University Relations department at UW-Superior, he had an individualized major emphasizing international marketing of fitness and business administration.
