Sensations inside Air France 447 vs. severe air turbulence

I watched a video that said that inside AF447’s stall (that lasted minutes, fell 37,000 feet all the way to the ocean,) that the wings may have had gyrations of up to 30 degrees. Is that pretty much far beyond what an airliner’s passengers and crew would ever experience in severe air turbulence?
How well would the flight attendants and passengers have recognized that this ***wasn’t *** air turbulence? (Pierre Cedric-Bonin, the first officer, had informed the flight attendants that they would be flying into turbulence, minutes before the fatal stall began.)
