share an unusual Thanksgiving turkey recipe?

We usually prep our Thanksgiving turkey by slipping a mix of butter and “traditional” spices (rosemary, sage, thyme, salt, pepper) under the skin. It ends up pretty tasty, but I’m always looking for new and interesting flavors. I recently started Googling up cajun recipes, but now I’m looking to cast a wider net.

So waddyagot? Do you have an unusual method of preparing your Thanksgiving turkey? What spices and flavors do you use?

I’ve decided I don’t like it much any more, but Alton Brown’s brine recipe calls for, among other things, whole allspice berries and crystallized ginger. It permeates the whole bird.

It’s certainly different!
