I’m thinking of brewing some mead. I’ve got the appropriate homebrew equiptment. All I need is a recipe to follow. I’d prefer something fruity, like blackberry. But share what you’ve got.
I make an award-winning cyser with 12 lbs of wildflower honey, 3 gallons of apple juice, 2 gallons of water, 5 cinnamon sticks, and sherry yeast. Boil the cinnamon in some of the water, then add it to the carboy. Add warmed honey and juice and remaining water. Ferment for 6 months or so. The secret: just before bottling, stir in one can of concentrated apple juice. This gives the cyser a fresh apple aroma that is marvelous.
Otherwise, make a base mead and add flavorings come bottling time.
