So yesterday I’m feeling lethargic, but dinner’s gotta get made. I haven’t been to the grocery store in a while, but I’ve got 4 chicken breasts thawed - there must be something I can throw together without hauling my hindquarters to the store. I ransacked the cupboard and found a can of condensed Chicken and Mushroom soup. I peeled off the label and found a recipe for Swiss Chicken bake. Fifteen minutes prep time - minimal effort, I thought, and it’ll probably be OK. Put the breasts in a casserole. No herbs or spices? C’mon, I can do better than that. Dusted them with onion powder, dill, coarse ground pepper and freeze-dried basil. The next step is cover with four slices of swiss cheese. Hmmm…no swiss, but I’ve got havarti. Maybe another sprinkle of basil. OK, next is mix the soup and ¼ of milk spread over the top. Now I need ½ cup of herbed stuffing, cubed and 2 tblsp butter. Well, I’ve got bread crumbs - I’ll add some poultry seasoning, so I tried that with the butter and sprinkled it on top, and into the oven at 400° for 25 minutes. Should be OK.
So a half hour later I serve this with a salad and brussels sprouts from the freezer. We both took a bite, locked eyes and said “oh. my. GAWD!” This was the most flavorful chicken dish I have ever made! I was shocked! The havarti made the sauce rich and creamy, but you’d never suspect it was cheese. The bread crumbs were toasted and crispy, just the right touch of texture. I can’t wait to cook this again! I actually want to have company for dinner, just so I can show it off! It is amazing! I can hardly wait for lunch to eat the leftovers!
