Shouldn't we all be eating more collard greens?

Ogre, I’m going to have to try your method. I think I would like greens except everybody cooks them to slimy mush. I’ll have to make them only for me, though - the SO complained when I only cooked them for a half-hour, because that’s not long enough.

An hour to cook greens??? I have teeth, I don’t mind a little chewing, really!

Well, it really does depend on the green. What greens did yuour husband complain about, collards, or some other? Collards really do need some time, they are not a delicate leaf- there are some cullulose cells to collapse in these. There’s a reason you don’t see many raw collard salads.

On the other hand turnip or mustard greems would not need as long.

You think that’s bad? When my mother-in-law cooks pokeweed she boils them for an hour, changes the water, boils them for another hour, THEN she fries them in bacon fat!

Of course, with pokeweed you boil 'em like that to remove saponins, which will give you a hell of a tummy ache if you don’t. Done properly, though, it’s no problem and they have a surprising amount of texture and flavor despite that treatment.

If you’re refering to my post, I did mention that 1 hour was for the stems. Although it does not reduce the leaves.

Let me make this a little clearer… COLLARDS DO NOT GET MUSHY!

If you want them to taste like other greens, you can cook them for a few miniutes. But if you’re going to do that you might as well use something that’s easier to find and/or prepare for cooking. To get the full flavor of collards… Buy them fresh (in bundles), clean them, chop/tear/cut them, and cook them until they turn a darker shade of green, (30 miniutes may do it if you only have one bundle or a Glory bag). They will no longer have that grassy taste, and develop a full-bodied almost meaty flavor that is diferent from any other green. They need very little seasoning.
For even more flavor, I make them the day before and refridgerate overnight.
