smelly cheese

So OK I’m not from Wisconsin.
So far my favorite cheese is still mild colby.
I’ve some experience with cojack motzeralla swiss and parmesan and of course american.
I’ve heard of blue cheese and maybe even had blue cheese dressing on a salad, didn’t like it much IIRC.
So when a fish bait recipe says use Limburger or any smelly cheese I dunno what they are talking about.
SO OK Dopers, what are some kinds of smelly cheese?

My wife’s family is one of the biggest importers of fancy and exotic cheeses in the U.S. There are several; hundred different kinds of cheeses in the world. Many if not most of them stink to some degree. Some smell like spoiled milk and others smell like dirty baby diapers. Others may have an ammonia smell if the rind (the hardened outer layer) isn’t just right. Limburger does indeed stink although that one is hard to describe. Even Brie and Camembert can smell if you get close enough to them. Unfortunately, my wife is the internationally acclaimed cheese expert in the family. I have smelled more than my fair share but I have a hard time remembering which is which, I can ask her for notable ones tomorrow.

The blue cheeses like Stilton have distinct scents but they don’t usually stink IMHO. There are some exotic ones however and I am pretty sure that I have experienced some with a rank smell.

I should add another thing. Many of the stinky cheeses are soft and runny at room temperature and that makes them poor choices for fish bait. Limburger does make good fish bait BTW although it tends to be moderately hard to find because of its reputation.

There is a fish bait cheese used for catfish, and, if memory serves, for trout. We used to buy it to fish for trout in California… Sespe National park? It’s kind of orange-ish. Much cheaper than real cheese.
