OOOooooh…omelet. My weakness. That idea actually made my eyes water a little…with omelet-lust, I think.
I put it on a grilled sandwich using Trader Joe’s bought ingredients and it’s a delicious substitute for mustard. I made turkey and bacon sandwich. First I fried two slices of Trader Joe’s Applewood Bacon, cutting each slice in half to make it fit on the bread. I spread the antipasto on sourdough sandwich bread and topped two pickles and a slice of cheddar cheese on it. I added some smoked turkey and the bacon. Then I fried both sides of the sandwich in the bacon grease for one minute. It was delicious. Don’t use mustard with it, though. Too much salt that way. I think of this as an alternative to mustard and it’s quite good. I imagine I’ll use it for other things, as well.
This stuff is basically for people who like canned artichoke hearts. That’s all it is, just pureed into a chunky spread. It’s pretty sour tasting and not for everyone. But if you love sour, fermented foods this stuff is really good!
Why not use them as a pizza topping? Put them on top of the cheese, not under it.

Surprising to see anti-artichoke spread comments. Artichokes are so bland and innocuous; what’s not to like?
Now, I can see a measure of mystification and perhaps loathing at being faced with an entire steamed artichoke, because THAT requires hard work and finesse. But if someone has removed the meat from the artichoke and combined it with oil, vinegar, and seasoning so that it’s completely vulnerable and yielding to your probing tongue and gnashing teeth…

My sister makes little filled bread puffballs, some with sausage and some with a marinated artichoke/mozzarella mixture that that would work just fine in. Yummy.

I use pesto to make omelettes . . . I bet this would be good in one. A thin layer/spoonful along with some goat cheese folded into an omelette would make a tasty treat!

Add a can of chick peas, whirl around in food processor until smooth, ta daa…artichoke hummus.
The olive oil would never allow it to set up and harden. Bad idea! BAD!
Mix with cream cheese, spinach, and finely diced jalapeno, add enough mayo to thin to dipping consistency, (whatever that means to you). eat with tortilla chips, or whatever.
I cook some rotini pasta and add the jar of artichoke antipasto, grated fresh parmesan cheese, and black olive cut in half. My husband and I both like it a lot. It is a good, quick dinner.
