Sometimes you just want to make a big pot of something.

And then realize you don’t know what to make.

I make soup late in the week (Thursday or Friday), so I don’t want to do that today. And nothing too complicated…I think I’m in the mood for comfort cooking.
Maybean enormous pot of mashed potatoes, with cream cheese and cream and a buttload of butter; there should be enough to freeze afterwards. Also, I can put aside some of the pre-mashed potatoes for soup-making Friday.
Hmm. Maybe a pot of rice too–that would go nicely with several frozen meals I have on hand.

I considered chili, but it’s warm enough for shirt sleeves outside right now, so I think I’ll hold off a bit longer. But oooh! that sounds good too.

I found this recipe for Turkey Tortellini Soup ages ago and it has become a tradition to make every Christmas - but feel free to double/triple the recipe for a large portion - it freezes well in smaller container for a quick dinner.

Hmm…must try that. I really want to find recipes that I can freeze.

Make fresh pesto. Better for shirt-sleeve weather and freezes well.

I’ve got a ham bone in the freezer from the Thanksgiving ham, and am thinking of making some ham and black bean soup this week.

That makes 3 of us. Beef stew meat, enchilada sauce, chipoltle peppers, a head of garlic, two large shallots, a can of beans, half a pint of stout. More Chili Colorado I guess.
