Suggest the chicken's fate

I had some boneless chicken breast, so I put it in a crock pot with about half an onion, some minced garlic, salt, pepper, dried parsley, a sprinkle of paprika, and some olive oil. I may or may not toss in a couple of potatoes later.

So when it’s cooked, what should I do with it? Could make shredded chicken tacos, but we just had cheese enchilladas and tamale pie recently. (Note: Not in the same meals!) I could add chicken stock, potatoes, carrots, and celery and make chicken soup/stew. Only, I don’t want to go to the store. I could top it with Bisquick and call it a casserole. We could just eat the chicken as it comes out of the pot, with mashed potatoes and gravy and some corn. I could shred it up and mix it with BBQ sauce and we can have sandwiches.

Faced with some chicken breast you’ve cooked in a crock pot, and the disinclination to go to the market, how would you eat this for dinner?

Eat it as is, out of the pot, with mashed and gravy. And corn. Mashed potatoes, with corn mixed in, with gravy is the best ever.

We ate it as-is. I should have used more salt, but it was fine – especially with some Tiger Sauce. I made gravy from the liquid in the slow cooker, and the SO commented on how good it was. She went back for seconds, so it must have been all right.

And yes, she mixes her corn in with her potatoes. :stuck_out_tongue:

So there was one piece of chicken left…

For lunch today I sliced it into three thick piece, plus a couple of bits, and dredged it in a mixture of flour and Johnny’s seasoned salt and fried it in a little oil. It was good.

Haven’t had chicken and dumplings in ages, or shmaltzy chicken soup with egg noodles and/or matzoh balls either. I’ll have to pencil that in for next month. (Our fridge is already full of prepared dishes just waiting to be eaten!) :o

I know! What’s up with the SO not wanting to eat the same thing until it’s gone? I made burgers last night, and I’ll just bet she’s not going to want them for dinner tonight! :confused:

A list of my fridge’s contents, in addition to milk, butter, yogurt, juice, and so on:

Three steak sandwiches left over from last week’s barbecue (I ate the last Italian sausage last night);

A baked potato, also left over from the barbecue;

Burrito fixings, enough for a dozen or more;

Pizza fixings, which I hope to use up this weekend;

Fixings for deli sandwiches (e.g., corned beef, pastrami, roast beef, Montreal smoked beef);

Tupperwared biscuits for breakfast (to be eaten as scones).

Don’t even get me started on what’s in the freezer! :smack:
