The simplest one is tomato jam (tomato jelly), my mum gets a glut of tomatoes from her garden each year, and tomato jam is one thing she makes. It’s very sweet and plummy tasting.
Yeah, my mom makes a tomato jam, too, with garlic and basil. It’s terrible by itself, but somehow becomes ambrosial when spread on bread and butter.
I don’t think you could make a jelly out of tomatoes, though, or at least it wouldn’t work very well. Tomato juice is too thick.
Commercial tomato juice is a cooked tomato product with pulp left in. If you heat up the tomatoes just a little, to break some cell walls, and then strained them through cheesecloth, you could probably get a liquid that could be jellied. You’d need to check the pH first to get the recipe right, though.
