Professional S has the rivited handle, this is what I own
Four Star has the molded handle, in a standard shape
Five Star has the molded handle, ergonomic shape

They do have the same blade technology, apparently made of 2 pieces joined together at the handle, unlike some blades (Wustof) that use a single piece of metal straight through. I’ve heard that a Henckels blade can break if dropped at the right angle.

I like my Henckels blades, but I need to get them out to a good sharpener, my home sharpening isn’t getting the job done. As a result, I only really like my 6" chefs knife, since it’s got the best edge of them all.

I’ve got a santoku knife from Bed, Bath & Beyond that is great at slicing and scooping; I think it’s from Joyce Chen. I was wondering; do any of you have a ceramic knife? I know I’ve seen Ming Tsai of Simply Ming use them. They come in black or white and they can slice very thin.
