Tell Me What To Do With Ghee

I just bought a jar of ghee at the Russian market. I’m looking for suggestions on what to do with it. Also, it was in a refrigerated section. I thought ghee did not need refrigeration. Due to my keeping kosher, I cannot use the ghee on any meat or poultry. But, surely vast expanses of ghee adventures await me.

Indian cooking relies on ghee quite heavily, and there’s a lot of vegetarian cooking. Check out some Indian food websites or cookbooks, and you’ll have a pretty good list to choose from.

[ETA]: Head over to BBC Food and check out their recipe finder. You can search by ingredient, then tick “vegetarian” and you’ll come up with some great stuff, like these mustard greens by Madhur Jaffrey that look pretty nice.

Also there’s a lot of fish-orientated food from southern India in particular (fish+dairy is OK, right?)

Hehe. I was just coming back in here to ask about fish + dairy with keeping Kosher.

We use it in stove-popped popcorn. (During the popping.) It is soooo good.

Fish is pareve, so yes, it’s ok.

Ghee? You should be able to get some good ideas here.

Mix it with a big, cold, glass of Kraut Juice. Bottoms up!

Use it for dipping some nice crab legs.

Form a ghee club?

I don’t know whether this is a joke or not.
