Hmm… I’ll assume based on Chip’s Challenge you’re talking about electronic games. It has to be easy to learn, hard to master. Timeless and well-known.
I’d go with Civilization II, except for that “easy to learn” part. Saw a newly-introduced friend get thoroughly addicted this past summer.
So I’ll take the easy, cliched way out, and pick Tetris. Anyone wanna try and argue against that?

The best game, IMO, is a series. Final Fantasy. I am playing FFX right now, but it has been great to see the game progress from the stick figure battles that were in the eairly ones. As for FFX, the movie-like plot is awesome.
Final Fantasy? The older ones are nice, but the new ones are hardly even games. Not that interactive movies are necessarily bad but still…
No game can ever beat chess. Never!

Civilization II. In the pantheon of games, it’d be Zeus. But Tradewars - and does anyone here know how I can get my hands on a copy? That was a great game.
I’m going to cast my vote and say Sword of the Samurai. It’s an old game, bad graphics and sound. Yet even with it’s handicaps I find it incredibly addictive, every couple of months I’ll pull it out and play it for a few weeks, repeatedly. The replay value is great I think.

Chess would have to get the nod - but if we just consider computer games then Civ (1) would take it for me. Civ2 builds too much on the 1st and is more difficult to learn on it’s own to take the title.

Chess for me!! Endless variations! While I do love RPG’s (I have all the FF series and the DragonWarrior series and the Myst series and…), once you’ve done them, it’s the same thing all over again when you replay them (and I do). But chess is different every time you play it.
Second favorite (not necessarily the 2nd BEST, mind you) for me would be cribbage.
