FYI, in the “take the cannoli” scene, Clemenza is not wearing gloves.
Paulie was probably sweating bullets-the dialog in the care went like :
Clemeza: "“exterminate…that’s a good one…watch out we don’t exterminate you”
Paulie: (silence)

This is a movie in which Michael Corleone murders two men, one of them a police officer, in plain sight in front of a dozen witnesses, having left fingerprints everywhere, and all he has to do is go to Italy for a few years and when he comes back nobody in the NYPD bothers to say “Hey, isn’t that the guy who murdered two people a few years ago?”
I think it’s pretty strongly assumed in the films that the police are not very good at their jobs.
In the book, the reason Michael was able to come back is that someone already in prison for a life sentence was paid to confess to the murder of the cop.

Of both the police captain and Sollozo. Tom visited him in prison and showed him pictures of the two victims. Witnesses were shown pictures of the guy and paid to testify against him. Genius Vito.
It was someone already sentenced to death, IIRC.
