aruvquan @60: I agree with you about the Andersen’s vegan pea soup recipe. If it ain’t online, here it is straight from the Andersen’s Cookbook (Celestial Arts, Berkeley, 1988). My edits in brackets.
2 quarts of soft [huh?] water
2 cups [one pound] of green split peas
1 stalk celery, coarsely chopped
1 large carrot, chopped
1 small onion, chopped
1/4 tsp ground [dried] thyme
1 pinch cayenne pepper
1 bay leaf, ground [not ground, just take it out before pureeing]
Salt and pepper to taste
Combine all ingredients in a big pot. Bring to a boil and boil hard for 20 minutes, then simmer until peas are tender [I say 2 hours, just to be safe]. Strain through a fine sieve [puree with an immersion blender]. Reheat. Makes 6-8 bowls [really only 3-4, if it’s going to be a meal].
[Of course, the soup is much better if you start it off with a smoked hock, a hambone, or a couple of smoked pork neckbones. Just saying.]
