Why does this association exist? Van Houten cocoa has been around for over 100 years. We hear of “double-Dutch chocolate” ice cream or whatever. How did this come about?
My guess is that it has to do with their former New World colonies Suriname and Guyana; can anyone confirm?
C.J. van Houten (a Dutchman) invented the cocoapress in the early 1800’s. This invention helped reduce the price of chocolate, and therefore made it more accesible to the great unwashed. “Dutch Cocolate” is a product which has undergone “dutching” which is alkalizing the cocoabutter that the cocoapress removed from the beans, making it less acid and less bitter.
