Jeff Smith, famous for his 1980s PBS cooking program and for his frisky ways with hitchhikers and teenaged kitchen assistants, has kicked the salad spinner at the age of 65.
I keep four of his books on my easy-to-hand shelves…Cooks American, Cooks Italian, Three Ancient Cuisines, and On Our Immigrant Ancestors. I have two more down on the basement (“never-or-hardly-ever-used”) cookbook shelves.
I always found his books pleasant, easy to use, and good sources for basic recipes; he’s my standard for German braised red cabbage, and Beef Stroganoff (he’s sensible about the sour cream – two or three tablespoon rather than the CUP some books call for), among others.
