1 stick butter
1 1/2 cups graham crackers
1 can Eagle brand sweetened condensed milk
1 cup semi-sweet chocolate chips
1 1/2 cups coconut
1 cup chopped walnuts or pecans
1 cup butterscotch chips
Melt butter in a cake pan. Sprinkle crumbs over butter. Top with remaining solid ingredients in the order given and press down firmly. Pour sweetened condensed milk over to top.
Bake 25 minutes or until lightly brown at 350 degrees.
Chocolate leaves. Not that anyone in my family (including myself) actually ever baked them…we’re all terrible cooks.
During the holidays, however, there used to be a bunch of bakeries by me that sold them. Rents go up, small bakeries get pushed out and now, no more chocolate leaves.

I’ve just come home from the grocery store, where I bought:
20 pounds flour
15 pounds white sugar
6 pounds brown sugar
2 dozen eggs
4 pounds butter
1 can shortening
2 1/2 pounds pitted dates
5 pounds walnuts
1 pound pecans
2 pounds raisins
1 1/2 pounds coconut
2 pounds candied fruits
2 boxes graham crackers
3 jars seedless raspberry jam
3 containers various colored sprinkles
1 container each red and green decorating sugars
2 pound bag powdered sugar
1 bottle pure vanilla extract
1 bottle almond extract
3 bags chocolate chips.
IOW, I have spend my entire grocery budget and have not a single nutritious item to serve.
But who needs nutrition? Shortly we will have

Okay, before you all worry about the household developing instant diabetes, we give cookie platter to all our neighbors, plus take them to his and my work Christmas potlucks, plus more to several elderly ladies. That means we’ll only have, oh, maybe 7 dozen left to eat ourselves.
When I was 12 I decided to give baking a try around the Holidays. I wanted to impress everyone with a really unusual recipe. I scoured Betty Crocker for hours and finally decided to go with the Brazilian Coffee Cookie. Daring, no?
I followed the recipe with a level of precision rivaled only by the greatest microbiologists of our time–or any other time for that matter.
I sifted. I creamed. I pre-heated… I whisked. I stirred. I blended.
About an hour after I had begun, the first batch of cookies came out of the oven. The cookies beautiful golden brown color was like the dessert sand of the Sahara. The aroma wafting through the kitchen brought to mind a truly wonderful espresso.
I called the entire family together (all 6 of them) in the kitchen to sample my glorious creations. They all grabbed a cookie and took a healthy bite. Immediately upon mouth contact, most of my family members started looking for some way to dispose of the contents in their mouth. I was devastated.
Turns out that when a recipe calls for 2 cups of coffee, you’re supposed to dilute before adding to the mix…
Oh, don’t feel too bad. I’m still haunted by the incident we refer only to as the Salt Scone Hockey Puck Debacle. Sugar and salt in ziploc baggies in the pantry? They look a LOT alike. 1/2 cup is a LOT of salt in a baked good At least yours was caffeinated…
Be careful baking cookies with Airbake sheets!
I thought they were terrific for everything until one year I attempted lady locks on airbake sheets. I learned the hard way that if the dough has a lot of butter or shortening (bah - I use butter) in it that your cookies may melt instead of setting up properly. Some cookies need the high heat to get them to firm up quickly and maintain shape. My lady locks were all puddly on the bottom of the clothespins.
I’ve seen some drop cookies turn into puddles on airbakes. I love them for biscuits, but I’m cautious with cookies now.
Get an oven thermometer and check he temperature of your oven. With a thermometer I discovered that my oven sometimes doesn’t get hot enough and other times gets too hot.

I’m having my Christmas cookie neighborhood exchange tonight. I made four kinds of cookies, including jellyblue’sred wine cookies. These are awesome! Really easy to make (assuming you don’t mind the chill time). I chilled the dough for two hours – can’t imagine why it would need as long as six – and cooked them for 11 minutes. 14 was way too long in my oven. I just cut them out in rounds with a drinking glass, cooked 'em up, and frosted them with the glaze. They’re delish! They taste sweet but a little different in a way people won’t be able to idenfity; I think you wouldn’t know there was wine in them unless you were told. We’ll see how they go over at the exchange tonight.
Anyone else have any updates on the Christmas baking?
We had a nor’easter and my friend had to cancel her cookie party. She always makes Hello Dollies as her contribution to the swap. I bought buttloads of coconut and the other stuff for coconut macaroons (which I planned to dip in chocolate and almonds) and have no immediate use for it. I may make what I planned to, for the office, without the stress of a new recipe potentially going bad and ruining the cookie swap.
My late aunt used to make the best Christmas cookies-they were flavored by the (german origin) liqueur called kummel. I loved those cookies! I found a recope on the net, but I can’t find Kummel anywhere-none of the liquor stores I hopped ahve it-apparently, nobody stocks it anymore. Kummel is flavored with caraway seeds-anybody know if you can make it at home?
