When I hear the words “one hit wonder” I immediately think of Play that Funky Music, White Boy by Wild Cherry. Here’s a couple more that I don’t think were mentioned.

Mr. Mister - Broken Wings & Kyrie were BOTH number-one on Billboard in America. In addition, Is It Love, from the same album, was a #8 hit in the U.S.
Wang Chung - They hit the American Top 40 FIVE TIMES. 1984’s Don’t Let Go and 1987’s Hypnotize Me both petered out in the low-30’s. In between, Wang Chung managed to string together three top-20 hits in America: Dance Hall Days (#16), Everybody Have Fun Tonight (#2), and Let’s Go! (#9).
Men Without Hats - Hit #20 in America with Pop Goes the World in early 1988, after going to #3 with The Saftey Dance over 4 years earlier.
Adam Ant - Goody Two Shoes hit #12 in early 1983. His next American Top 40 appearance was seven years later, with 1990’s Room At the Top (#17). Strip never made the American Top 40, though it was a much-played radio & MTV song in it’s time (1986?). My WAG is that Strip HAD to be a top-10 in the UK.
Big Country - In a Big Country was their only American Top 40 hit (#17), but IIRC, Big Country remained huge in England for some time, chalking up many UK hits.

I’d like to add that the entire album kicked ass.
Lisa Loeb also had a tune called “Do You Sleep”. It didn’t have the success of “Stay”, but it was a good song.
