You know how beautiful a glass of Guinness is, with the brown bubbles cascading down into the blackness of the beer? Well, this morning I made my espresso into a clear demitasse . IT HAS THE SAME EFFECT! God, it’s gorgeous to watch the crema form a thick head and seem to cascade down into the blackness of the espresso.
I was moved to tears, it was so wonderful. I may never use opaque again.
