I’m keeping it simple: pork chops in pan with a dab of olive oil and garlic pepper, sauteed onion and mushroom on the side, baked potato, and salad (romaine with bacon-ranch dressing, cracked black pepper, some of the leftover raw onion and some provel tossed in).
Tonight for dinner was a top sirloin steak with a red wine/mushroom sauce, baked potato, and garlic/red pepper kale.
I’ll also be making chocolate chai snickerdoodles later; just took the butter out of the fridge to soften. I bake cookies every Monday night, and bring them in to share with my coworkers.
Not too much cooking this weekend; my freezer is full of the marinara sauce I made last weekend, the 10-bean soup from the weekend before, and the sirloin, chicken, and burgers I bought from Omaha steak yesterday.
Plus - there’s only me to eat it all. Darn it. I’d cook so much more if I had more people eating it.
I know the feeling.
My husband the cook treated us to a nice home made superbowl feast today. He made chips. To go with it he made home made guacamole, salsa and bean dip. He made three kinds of chicken wings – fried, teriyaki and marinated in Buffalo sauce. He also made a nicely grilled steak, garlic mashed potatoes and some freshly steamed veggies.
I am stuffed and happy.
Almost forgot to post about what I made for Mr. 1341- I don’t eat red meat, but I don’t mind cooking it for him. He actually e-mailed me a recipe for something called Flank Steak Tidbits- marinate a flank steak in olive oil and 1 head of crushed garlic. Slice up a loaf of French bread. Brush the marinade onto the bread. Slice the steak really, really thin, and put it on top of the bread. Put under the broiler for 7-10 minutes.
He loved it, and I plan to make it the next time we have company or I have to take potluck.
I made a whole batch of these today. I popped open a roll of crescent dough and went to the trouble of wrapping each one, baking them, and putting them in the refrigerator for Mr. Salinqmind to heat and consume later. Went out for a few hours, came back, and Mr. Salinqmind informed me the wienies weren’t very good because…
…the fucking jackass heated them up into a greasy, gummy mess in the MICROWAVE! :smack:
What an idiot. You’d think, after 15 years of eating these, he’d have the brains to put them in one of our two ovens for a few minutes.
Homemade applesauce is easy & quite tasty. I make it for my kids once every week or so.
Just wanted to point out that apples don’t take very long to cook, so it may be easier for you to cook them on low or med-low heat in a saucepan for 15 or 20 minutes next time.
