There cannot possibly be an "edge of the Universe."

If the Universe is expanding faster than the speed of light, how can we humans keep saying or referring to the edge of the Universe?

Because human speech isn’t constrained by scientific fact.

That said, scientists might refer to the edge of the observable universe, which is defined by that same speed of light; it’s how far we can see, not the physical edge of the universe.

Of course there is, that’s what the term means; it’s how far we can observe anything. It’s at edge the same way the horizon is an edge.

I dropped my glass of water on the floor. The spill is still currently expanding. How can we humans possibly refer to the edge of my spilled water when it is expanding?

I thought the reason there can’t be an edge is due to translation symmetry. If there’s an edge, that means that there is (a) / are privileged place(s). If that was the case, then experiments done at those places would give different results than experiments done in other places. If this was the case, then the corresponding conservation law, the conservation of momentum, wouldn’t hold, and since it does, that means we can know that there is no edge (or center).

ETA: Which doesn’t necessarily mean the universe is infinite in any of the spatial dimensions. It’s possible for the universe to be finite in size but still have no edge.

I read that before postings. I consider it mumbo jumbo cos it truly falls into the circular reasoning theory. It’s rubbish.

It is the scientific consensus by cosmologists backed up by extensive astronomical observations and our well-validated theory of gravitation (general relativity).
