Things that cannot be mass-producd well.

Chicken and dumplings with rolled dumplings. Momo made the world’s best dumplings. After she died, Grampa would take me with him to this little place where they made them almost as good as hers. Then the cafe closed. I’ve never been able to make decent rolled dumplings. And the canned stuff is abysmal. No good dumplings for me since 1969.

Sushi. The offerings of a multitude of grocery stores in my area have only served to demonstrate that no one has gotten this one right yet.

My nomination would be… entertainment.

All of the best and greatest performances I’ve ever seen were one-offs, the kind of thing that happens one time, for one small audience, in one particular context where everything comes together perfectly. When you try to wrap that up and package it for mass consumption… something always gets lost in the process.

Yeah. I walked out when they told me, no, I couldn’t get a burger done medium-rare.

That usually means they’re using bargain-basement meat.
