Today I ate pancake syrup that expired 06/08/10

but pure maple syrup is just sitting on a shelf unrefrigerated at the store

^ She means refrigerated after opening. And usually, items to which that applies say that somewhere on the label.

So is mayonnaise.

You put mayonnaise on pancakes?!!

Just bought some (real) maple syrup last night. Our kids have pancakes pretty frequently, and until recently they’ve been fine with the crappy “pancake syrup” stuff while mom and dad had our own stash of real maple dark amber. But the kids have caught on that the real stuff is way better, and now won’t eat the fake stuff, so they use up my precious amber gold too quickly. Spent $19 on a 32-oz bottle for our blueberry pancakes last night!

We made our own maple syrup this year, at a friend’s farm. Using his equipment. It’s amazing stuff.

Ya, I only buy real stuff for the premium price for which I think is fair for such a beautiful condiment. Anyone ever tried it in tea or coffee? Delicious. It always says to refrigerate after opening. What’s lovely is that it doesn’t get weirdly thick in the fridge like honey does.

To save money, buy B grade, or even C grade if you can find it. Most people think A is the best, but it lacks the flavor of the higher letter grades. Folks up north never buy A, that’s for the tourists.

I eat slightly expired food occasionally and think nothing of it, but this guy (whose blog I usually enjoy) is a little, IMO, nuts to eat the things he’s blogged about lately.

We once had some in our fridge for so long that I believe it turned into maple schnapps. It smelled like whiskey mixed with maple syrup. Neither my husband nor I were brave enough to try it, though now I sort of wish I had. I always wondered what happened to it, I didn’t think real maple syrup could go bad (at least not for quite some time), and definitely didn’t expect it to ferment.

I wish; but the grocery stores around here don’t carry B grade. I agree, the darker the better.

When we visit my parents in New England we always get a jug of B to take back with us. We should just order it online; but we always need it RIGHT NOW.
