Tonight, I attempt first meatloaf ever. Tips?

Watching this thread with interest and looking at some of the yummy-sounding suggestions - my family is not fond of meatloaf but I bet I could convince them with some of these ideas! Might be a good way to use up the leftover rolled oats from our annual cookie-jar assembly.

But I did want to post one word of warning: I think the product has been discontinued but for a while, Heinz was making colored ketchup products.

A friend had a bottle of green ketchup on hand when she made a meatloaf.

The results… weren’t pretty. I gather it tasted fine, but looked pretty horrifying.

This recipe sounds very strange, and looks gross, but wow. When I’ve made it, the neighbors have busted down my front door to get at the smell. It smells amazing and tastes even better.

Curry-Filled Chutney-Glazed Meatloaf

  • 2 lbs ground beef, or mixture of beef & pork
  • pinch of salt/pepper
  • 1 egg
  • 1/2 cup fine bread crumbs
  • 2 tsp fresh garlic
  • 2 tsp garam masala (if you don’t have this, just any old curry powder is okay)
  • 2 Tb Tandoory curry paste (I used a green curry paste I happened to have)

Combine these ingredients and mix until just combined; form into a long flat loaf shape on top of a broiler pan.

Plum/Peach Chutney Glaze

  • 2 Tb plum sauce
  • 2 Tb peach jam
  • 1/4 tsp curry powder

Combine these ingredients, and spread over top of meatloaf.

Place loaf in 350 degree oven. Total bake time is 50-60 minutes

Be prepared to have your house smell like you are the best cook ever. The combination of flavors with the curry and the chutney is just… wow.
